Course description
This course covers the use and preparation of menu items suitable for clients requiring dietary modifications. Students will be expected to gain an in-depth understanding of foods available, prepare and evaluate meals suitable for people with special dietary needs. Students will be expected to be able to transfer the knowledge and skills gained into the future, so that while not all clinical topics will be covered, the principles will be pertinent and relevant.
